It's raining, it's pouring......

I forgot to snap some pictures of my creepy crawly bugs last night. They turned out great and were extremely simple and quick to make.

We have been getting rain and storms all night and it's still going. We are supposed to have Trunk or Treat tonight from 4-6 p.m. at Chad's unit, however, it may be cancelled. If it's cancelled it really will be sad because we were all looking forward to it. There were to be 2 haunted houses, one for the kids and one for the adults, plus trick or treating in the parking lot. Baskets were to be raffled off, I actually went and bought one for our unit to raffle this morning. I guess if we don't use it, we can save it for our holiday party.

I bought a small rounded basket from Walmart and filled it with card games. I put in Skip-Bo, Phase 10, Cribbage, Monopoly Deal, a regular deck of cards, and UNO.

Guess I better get it together so I can deliver it to the unit.

You know what I love.....

Halloween socks!

Really, I do. I have a pair that are orange and black striped and are the softest material ever. They are a bit slippery on uncarpeted floors though. However, they make my feet and my 6 month old son Eli happy.

I sat down next to him this morning and he immediately went for the socks. He just stared and touched them. I think he's jealous because he doesn't have any. I don't think they make them that small.

I also love Halloween themed coffee cups. I'm drinking out of one right now that I purchased at Hobby Lobby several years ago. It says Witch & Famous and is a witchy green with black and orange block trim around the top and a painted picture of a witch walking her black cat in the middle of the words. Awesome!! I have several more, but this one's my favorite.

Pumpkin Bread

You'll need:

3 cups sugar
1 cup oil
4 eggs
2/3 cup water
1 can pumpkin
1 tsp. cinnamon
1 tsp. pumpkin spice
2 tsp. baking soda
1 1/2 tsp. salt
3 cups flour

Combine sugar, oil, eggs, water, and pumpkin. In another bowl mix spices, flour, and salt. Add flour mix to sugar mix and stir together just until moistened.

Grease 3 medium sized loaf pans. Spoon in batter and bake at 350 degrees until toothpick comes out clean, approximately 1 hr. 15 minutes.

Meatloaf

This is the meatloaf that I grew up with and make for my family now. Even the kids eat it. I always serve it with mashed potatoes and corn.

You'll need:

2 lbs. hamburger
2 eggs
1 pkg. McCormick Meatloaf Seasoning
1/3 cup milk
2 slices bread (stale or let it sit out for a bit)
Ketchup

Mix all this together and put into meatloaf or bread pan. Top with ketchup. Bake at 375 degrees for an hour or so until done. I always end up cooking for more than an hour.

Creepy Crawly Bugs

This recipe is from the 2008 Taste of Home Halloween Party Favorites magazine. I'm going to make these for the meeting i'm hosting Wednesday night.

You will need:

1 tube refrigerated breadsticks
8 smoked sausage links or hot dogs
1/2 to 3/4 cup potato sticks
Ketchup and/or prepared mustard

1. Separate dough into strips. Unroll and cut eight strips in half widthwise; set remaining strips aside. Cut sausages in half widthwise. Wrap one piece of dough around each sausage, leaving the rounded end showing. Place seam side down on an ungreased baking sheet. Place reserved breadsticks on baking sheet.

2. Bake at 350 degrees for 15-17 minutes or until golden brown. Remove bugs to a serving plate and cool 2 minutes.

3. Insert potato sticks into baked dough to resemble legs and antennae. Decorate with ketchup and/or mustard. Serve warm.

Yield: 8 servings

Menu Plan Monday

It's been a couple months since i've posted here. We've all been sick off and on and just plain busy. I thought I would start back with my menu plan for the week.

Monday- Stromboli

Tuesday- Meatloaf w/mashed potatoes and corn

Wednesday- Creepy Crawly Bugs, Pumpkin bread, Halloween decorated cupcakes (meeting)

Thursday- Potato soup w/grilled cheese

Friday- Chicken and Dumplins w/homemade yeast rolls

Saturday (Halloween)- Chili w/cornbread and S'mores for dessert
